Courgette Pizza
Ingredients
450g (1 lb/ 2 cups) courgettes, grated
450g (1 lb/ 2 cups) potatoes, grated raw
Freshly ground pepper and mixed herbs
Topping suggestions
tomatoes
peppers
cheese
tuna
cooked ham or turkey
pineapple
mushrooms
Method
Pre-heat the oven to 180c (350c/Gas 4)
Mix courgettes, potatoes, pepper and mixed herbs together and press into a pizza tin or baking tray to form the base of the pizza.
Add toppings of your choice and bake in the oven for about 20 minutes or until nicely browned.
