Irish Soda Bread

Ingredients

1lb/450g wholemeal flour
8oz/225g self raising flour
1 dessert spoon caster sugar
1 teaspoon salt
1 teaspoon bicarbonate of soda
Approx. 12-15 fl oz/470ml semi skimmed milk
1 tablespoon lemon juice

Method

Squeeze juice of a lemon and add 1 tablespoon to milk. Let it stand for half an hour to sour it.

Pre heat the oven 200°c/400°f/gas mark 6

Measure two sorts of flour into the mixing bowl.

Add remaining dry ingredients, caster sugar, salt, bicarbonate of soda and mix well.

Make a well in the centre and combine with enough soured milk to make moist but firm dough.

Sprinkle a little flour onto a work surface and turn the dough onto it. Knead lightly then divide into two.

Form into rounded shapes and press outwards until.

Place on a floured baking sheet. Make a cross on the top.

Bake for 35-40 minutes until bread is brown and sounds hollow when tapped.
