Scones

                            

Ingredients                                        

300g 12oz self raising flour
1 teaspoon baking powder
pinch of salt
1 egg                                                               
1 teaspoon sunflower oil
250ml ½ pint semi skimmed milk
flavouring of your choice 3oz cheese, handful of sultanas or raisins, handful of fresh raspberries or blackberries, 1 apple finely grated, 1 teaspoon ground cinnamon or mixed spice.

 

Method

Heat the oven to 220c/425f/Gas 7.

Sift flour, baking powder and salt together.

Break an egg into a jug. Add oil and mix well with a fork. Add milk to the measuring jug until the mixture reaches the 250ml ½ pint level. Mix well.

Add the liquid ingredients to the flour and add your chosen flavouring and mix together with a wooden spoon.

Sprinkle a little flour on the worktop and flour your hands as well. Turn out the scone mix. Don't worry if the dough seems quite sticky, that's how it's meant to be.

Using either your hands or a rolling pin, smooth the dough out until it is about 1 inch thick.

Cut into rounds and place on a floured baking tray.

For a shiny finish, brush the scones with milk or beaten egg.

Bake for 12-15 minutes. Cool on a wire rack.
