Fruity Crumble Square

Ingredients

175g 6oz butter at room temperature
250g 8oz plain flour
2 tablespoons cornflour
75g 3oz caster sugar
100g 3½oz dried fruit (mixed or apricot)
1 small dessert apple

Method

Pre-heat oven at 180c/350f/ Gas Mark 4.

Cut the butter into pieces and put into a large bowl with the flour, cornflour and sugar.

Rub in the butter with your fingertips until mixture looks like fine breadcrumbs.

Remove about half of the mixture and reserve for later.

Squeeze the rest of the mixture into the base of a baking tin with your knuckles.

Grate the apple (with the skin still on) over the mixture in the tin. Then cut the dried fruit into pieces and sprinkle on top of the apple. Finally sprinkle the remaining crumb mixture over the top.

Bake in the centre of the oven for 30 minutes until the top is lightly browned. Leave to cool for 15 minutes then slice and leave to cool completely.
