Apple Spice Muffins

Ingredients

9oz/250g self raising flour
1 tsp baking powder
1 ½ tsp mixed spice
3oz/75g granulated sugar
Wet:
1 egg
5 fl oz milk
6oz/175g apple (2 apples) chopped
3oz/75g corn oil or melted butter
3oz/75g sultanas

Method

Pre-heat the oven to 190 C/375 F/Gas Mark 5.

Sieve together all dry ingredients and add the apple.

Pour all the wet ingredients into the dry ingredients and stir.

Spoon the mixture into cases and bake for 20-25 minutes until the tops are lightly browned and spring back when touched.

Leave to cool

These muffins can be frozen, and defrosted in a microwave for 30 seconds each on high.
