Banana & Chocolate Muffins

Ingredients

200g (7oz) self-raising flour
½ teaspoon baking powder
2 free-range eggs, beaten
5 tablespoons sunflower oil
5 tablespoons milk
1 teaspoon vanilla essence
2 ripe bananas, about 325 g (11oz) unpeeled weight
100g (3 ½ oz) milk chocolate chips

Method

Preheated oven at 200C/Gas Mark 6.

Line a 12-hole muffin tray with paper muffin cases.

Sift the flour and baking powder together into a mixing bowl.

In a separate bowl beat the eggs, milk and vanilla essence together.

Using a fork, mash the bananas on a plate then add to the flour with the egg mixture and fork the ingredients together briefly until only just mixed. Stir in the chocolate chips.

Spoon mixture into the paper cases and bake for 15 mins until muffins are well risen and the tops spring back when lightly pressed with the fingertips.

Transfer to a wire rack to cool.
