Fruity Flapjack
Ingredients
50g (2oz) butter
75g (3oz) Muscovado Sugar
1 teaspoon powdered ginger (optional)
4 tablespoons rapeseed (canola) oil
250g (8oz) rolled oats
24g (1oz) sultanas
50g (2oz) chopped apricots, papaya, pears or peaches (or a mixture)
Method
Preheat the oven to 180°c (350°F) Gas Mark 4.
Line a swiss roll tin with non stick baking paper.
Put the butter and sugar in a large saucepan and heat gently until melted, then stir in the oil and ginger (if using). Add the oats, sultanas and fruit, stir to mix.
Spoon the mixture into the tin, level the surface and press down gently. Bake for approx 30 minutes.
Leave in the tin for 10 minutes, and then cut into slices. Leave until cold before removing from the tin.
