Tuna Pasta Bake
Ingredients
Low fat cooking spray
40g (1 ½ oz) dried pasta shapes
100g (3 ½ oz) broccoli, broken into florets
200g can of tuna in water, drained and flaked
2 small eggs
150ml (¼ pint) skimmed milk
1 tablespoon chopped fresh parsley
(Or ½ teaspoon of dried)
25g (1 oz) mature cheddar cheese, grated
Fresh black pepper
Method
Preheat the oven to Gas mark 5/190ºC/375ºF. Mist a 600ml (1 pint) ovenproof dish with the low fat cooking spray.
Cook the pasta shapes in boiling water for about 10 minutes, until tender. Drain well. While waiting for the pasta, cook the broccoli florets in boiling water for about 6 minutes until tender. Drain well.
Tip the pasta shapes, broccoli and flaked tuna into a prepared baking dish, distributing them evenly. Beat together the eggs, milk and parsley; season with pepper. Pour into the dish and sprinkle the cheese over the top.
Bake for about 35 minutes until set and golden.
