Curried Chicken Kebabs
Ingredients
2 chicken breasts
1 red pepper
1 green pepper
around 20 cherry tomatoes
2 onions
1 spoon oil
2 tablespoons curry powder
2 cloves garlic, crushed and chopped fine (optional)
seasoning to taste (e.g., pepper, paprika, cumin, cayenne pepper)
Method
Cut the chicken into bite size chunks.
Pour the oil into a bowl and add the curry powder, garlic and seasoning. Add the chicken and leave to marinate for as long as you can before you make the kebabs. Half an hour is a good time.
Cut up the peppers and onions into chunks about the size of a 50p piece.
Thread the chicken, peppers, tomatoes and onions alternatively onto kebab skewers.
Grill under a medium heat for approximately 15 minutes, turning occasionally until cooked through. Alternatively cook on a BBQ!
N.B. you could use other vegetables such as mushrooms, courgettes or aubergine
