Sausage Casserole

Ingredients

Low fat cooking spray
8 good quality, low fat sausages
2 sticks celery, chopped
1 leek, sliced
1 large waxy potato, peeled and cut into chunks
1 onion, chopped
15ml/1 tbsp plain flour
300ml/ 1/2 pint apple juice
1 red skinned eating apple, quartered and chopped
Freshly ground black pepper

Method

Preheat the oven to gas mark 6/200 c/fan oven 180 c.

Grill the sausages until brown then transfer to an ovenproof dish and add the chopped apple.

Fry the celery, onion, leek and potato for 5 minutes, then stir in the flour and continue to cook for 1 minute.

Gradually add the apple juice then pour over the sausages with the apple.

Cover and cook for 50 minutes in pre heated oven.
