Sausage Hotpot
Ingredients
Low fat cooking spray
450g (1lb) pork sausages, chopped
200g (7oz) button mushrooms
2 medium red peppers, de seeded and diced finely
400g can chopped tomatoes
2 teaspoons paprika
1-tablespoon French mustard
150ml (5 fl oz) stock
150ml (5 fl oz) low-fat plain yoghurt
Method
Heat a large saucepan and spray with the low-fat cooking spray, add the sausages and fry until browned all over. Add all the other ingredients except the yoghurt and bring to boil.
Simmer for 20 minutes then remove from the heat add stir in the yoghurt
