Spaghetti Bolognese

Ingredients
40ml olive oil
1 onion, diced
1 carrot, diced
1 red pepper, diced
1 courgette, diced
2 garlic cloves, crushed
400g can chopped tomatoes
1 tbsp tomato purée
1 litre chicken, beef or lamb stock
400g spaghetti
400g minced beef
50g parmesan cheese
Handful of chopped parsley (optional)
Method
In a large pan, fry the mince until browned - break up any clumps to make sure it is all cooked. Add the onion, carrot, and garlic until they have softened and the onions are slightly translucent.Add the other vegetables and fry for five minutes.
Add the canned tomatoes and tomato purée, stirring in well.
Add the stock and stir to mix well, then bring to the boil, reduce the heat and simmer for 15 minutes. Season to taste with a little pepper.
Cook the spaghetti in a large pan of boiling water for approx10-12 minutes depending on the instructions on the packet.
When the pasta is cooked serve with grated parmesan and parsley.
