Mixed Bean Chilli
Ingredients
1 teaspoon of oil
1 small onion, sliced
1 garlic clove, crushed
1 carrot, diced
½ red pepper, diced
½ green pepper, diced
A handful button mushrooms, quartered
½ apple, cored, peeled and grated
1 teaspoon chili powder
200g (7oz) can chopped tomatoes
200g (7oz) canned mixed beans
Black pepper
1 tablespoon chopped fresh parsley to garnish
Methods
Heat the oil in a pan and cook the onion, garlic, carrot, peppers and mushrooms for 5 minutes.
Stir in the apple and chili powder and cook for a further 2 minutes.
Stir in the tomatoes and mixed beans.
Cover and simmer for 20 minutes then remove the lid and cook for a further 10 minutes to reduce the liquid, increasing the heat if required.
Season to taste and serve hot. Garnish with chopped parsley.
