Spicy Bean Hotpot
Ingredients
Low fat cooking spray
1 red onion, chopped
2 carrots, peeled and chopped
2 celery sticks, chopped
1 red pepper, de seeded and chopped
1-teaspoon ground cumin
1-teaspoon curry powder
½ teaspoon ground ginger
400g (14oz) can baked beans
400g (14¾oz) can red kidney beans, rinsed & drained
200ml (7 fl oz) boiling water
Freshly ground black pepper
Method
Heat a medium saucepan and spray with low fat cooking spray. Add the onion, carrots, celery and red pepper and cook for 4-5 minutes, stirring occasionally
Add the spices and mix well. Cook for another 1-2 minutes
Pour in the baked beans and kidney beans and water. Bring to the boil and then simmer, covered, for 15 minutes.
