Tomato & Rice Soup

Ingredients

Low fat cooking spray
1 onion, chopped
2 garlic cloves, crushed
2 x 400g cans chopped tomatoes
1 tablespoon clear honey
1.2 litres (2 pints) vegetable stock
Either fresh parsley, thyme, rosemary or basil, chopped
100g (3 ½ oz) basmati rice
Freshly ground black pepper

Method

Heat a large saucepan and spray with the low fat cooking spray then fry the onion and garlic for 5 minutes until soften, adding a little water if necessary to stop them sticking.  Add the tomatoes, seasoning and honey, bring to boil and simmer for 10 minutes.

Add the stock, herbs and rice and simmer a further 25 minutes, and serve.
