Cheesecake
Ingredients
225g Low Fat Digestive Biscuits
75g Reduced Fat Spread
125g Low Fat Soft Cheese
100g Low-fat plain fromage frais
25g icing sugar, sieved
1 Lemon (juice and zest)
Method
Crush biscuits in a plastic bag using a rolling pin or bottle.
Melt the spread over a low heat and then mix in the biscuit crumbs until completely coated.
Put biscuit mixture into a flan dish and press down completely covering the bottom and sides.
Place in fridge and chill for 30 minutes.
Mix together the soft cheese, the lemon juice/zest and the fromage frais then beat in the icing sugar.
Spread the cheese mixture over the chilled biscuit base and chill.
